In AFR Magazine, Jill Dupleix takes an early look inside Vito’s and the vision behind Sydney’s newest Italian-American dining room. Opening September 2026 in the heritage-listed Burns Philp Building at 11 Bridge Street, Vito’s is inspired by the glamour, nostalgia and hospitality of the great restaurants that have stood the test of time.

It’s one of the bigger openings locked in for Sydney this year, and now Sunday Co. has officially revealed a little bit more info about Vito’s—a grand Italian-American restaurant set to land inside the heritage Burns Philp Building.

At 11 Bridge Street, in the heritage-listed Burns Philp Building, where Vito’s will open in August with former Carbone Hong Kong chef de cuisine (and 2011 The Age Good Food Guide Young Chef of the Year) Michael Fox in its kitchen.

“We want an old-school sense of grandeur when you walk in,” says Sergeant. While he concedes it might be seen as a risky investment in a tricky market, Sergeant hopes the meticulous refit “says we’re here for 25 years”.
